La palabra tetilla define claramente la forma tradicional c\u00f3nica, c\u00f3ncava-convexa, aplanada, con un ligero pez\u00f3n en su v\u00e9rtice. Es el queso m\u00e1s caracter\u00edstico y t\u00edpico de Galicia y f\u00e1cilmente reconocible por su formato y su corteza lisa y fina, de color amarillo pajizo.<\/p>\n
De pasta blanda, cremosa, uniforme, con pocos ojos y de color blanco- marfil, amarillenta, tiene una gran cremosidad en boca y un sabor muy natural, l\u00e1cteo, ligeramente ac\u00eddulo y salado suave apto para todos los gustos. Un queso de consumo diario y continuado, a todas horas, con buenas aplicaciones culinarias, sobre todo para rellenos y empanados, debido a su car\u00e1cter fundente con un golpe de calor.<\/p>\n
Es el queso de m\u00e1s tradici\u00f3n popular de los consumidos en Galicia aunque tambi\u00e9n es conocido y apreciado en el resto de mercado espa\u00f1ol. La estructura rural de Galicia, con peque\u00f1as aldeas y granjas diseminadas por todo su territorio, de orograf\u00eda ondulada y de clima mar\u00edtimo templado y h\u00famedo, convierte el noroeste de Espa\u00f1a ( el Finis Terrae ) en una pradera perenne y continuada, con peque\u00f1os campos en un paisaje agradable.<\/p>\n
De gran vocaci\u00f3n ganadera, Galicia es la comunidad aut\u00f3noma espa\u00f1ola con la mayor producci\u00f3n de leche de vaca; en cualquier rinc\u00f3n se puede encontrar una peque\u00f1a o gran queser\u00eda elaborando el Queso Tetilla. Un verdadero orgullo para la tierra que lo creo y que conserv\u00f3 con celo el secreto que esconde este queso de peculiar forma.<\/p>\n
